Black & Yellow

Recipe#36: blackberry muffins with lemon zest and poppy seeds

Ingredients

200 gr (1 ¾ C) flour

1 ½ – 2 tbsp poppy seeds

½ tsp baking soda

1 tsp baking powder

100 gr (½ C) butter

150 gr (¾ C) white sugar

2 eggs

2 tsp vanilla extract

zest of 1 lemon

2 tbsp lemon juice

50 ml (¼ C) milk

120 ml (½ C) yogurt

250 gr blackberries

Directions

Preheat the oven to 225° C (430° F).

Whisk together all the dry ingredients – flour, baking soda, baking powder and poppy seeds.

Then, in another bowl, combine butter (softened to room temperature), sugar, eggs, lemon juice and lemon zest.

Merge the dry and the wet ingredients, then add the milk and the yogurt. Mix just until combined. At this point, gently fold in the blackberries.

Fill your muffin liners almost to the top. Bake the muffins at high temperature for no more than 4-5 minutes, then lower the temperature to 180° C (350° F) and bake for an additional 10 minutes.

Recipe#13: chocolate muffins

Ingredients

110 gr (½ cup) butter

2 eggs

240 ml buttermilk (*)

2 tsp vanilla extract

230 gr (1 ¾ cup) all-purpose flour

60 gr (2/3 cup) cocoa

270 gr (1 ¼ cup) brown sugar

1tsp baking powder

1 tsp baking soda

½ tsp salt

170 gr (1 cup) chocolate chips

(*) you can easily make your own buttermilk: add 1 tsp of lemon juice to 240 ml of milk and let it stand for 5-10 minutes

Directions

Preheat oven to 190° (375 F). In a bowl mix the melted butter, eggs, buttermilk and vanilla extract. In another bowl whisk together the flour, cocoa, sugar, baking powder, baking soda, salt and then add the chocolate chips. Fold the wet ingredients in the dry ones, do not overmix the batter! Bake the muffins for about 20 minutes about 20. Remove from the oven, cover them and let them cool.

Recipe#9: carrot muffins

Ingredients

Muffins:

2 – 3 carrots, peeled and grated

1 small apple, peeled and grated

60 gr (1/4 cup) chopped walnuts

180 gr (1 1/3 cup) all-purpose flour

150 gr (¾ cup) granulated sugar

½ tsp baking soda

1 tsp baking powder

1 ½ tsp ground cinnamon

2 eggs

120 ml vegetable oil

1 tsp vanilla extract

Cream cheese frosting (optional): 

50 gr (¼ cup) butter

100 gr (½ cup) cream cheese

3 tbsp powdered sugar

½ tsp vanilla extract

Directions

Preheat oven to 180° (350 F).

In a bowl, combine the flour, sugar, baking soda, baking powder and ground cinnamon. Add the chopped walnuts. In another bowl, mix together the eggs, oil and vanilla extract.

Fold the wet ingredients, together with the grated carrots and apple, into the dry ingredients until combined. Don’t overmix! Pour the batter in the muffin cups and bake for 20 minutes. Remove the muffins from the oven, cover them and let them cool completely.

For the frosting, beat the butter and cream cheese until smooth. Gradually add the powdered sugar until fully combined then beat in the vanilla extract. These amounts will allow you to lightly cover the muffins with a a small dollop of frosting, halfway between a muffin and a cupcake!

Orange blossoms

Ingredients

250  gr (2 cups) all-purpose flour

16 gr (1 ½ tbsp) baking powder

80 gr (½ cup) granulated sugar

1 egg

100 ml milk

80 gr melted butter

100 ml orange juice

1 pinch of salt

grated orange peel (of 1 orange)

Directions

Preheat oven to 200° (390 F). In a bowl mix all the dry ingredients (flour, baking powder, sugar, salt, orange peel). In another bowl mix all the wet ingredients (egg, milk, orange juice). Fold the wet ingredients into the dry ones. Fill the muffin cups with the batter. Bake for about 20 minutes. Remove the muffins from the oven, cover them and let them cool.

Recipe#2: banana and chocolate chip muffins

Ingredients

230 gr (1 ¾ cups) all-purpose flour

100 gr (½ cup) granulated sugar

60 gr ( ¼ cup) brown sugar

1 tsp baking powder

½ tsp baking soda

a pinch of salt

80 gr (½ – ¾ cup) chocolate chunks (white / milk / dark chocolate – whatever you love most)

3 ripe bananas

120 gr (½ cup) butter

2 eggs

1 tsp vanilla extract

Directions

Preheat oven to 180° (350 F). In a bowl combine all of the dry ingredients – flour, sugars, baking powder, baking soda, salt and chocolate chunks. In another bowl combine all of the wet ingredients – mashed bananas, melted butter, eggs and vanilla. Fold the wet ingredients into the dry ones. Combine well but be careful not to overmix the batter. Bake at 180° (350 F) for about 20 minutes. Remove the muffins from the oven, cover them and let them cool.
